This research was carried out to study the bioactive compounds which found in red beet roots as antimicrobial activity and as anticancers in the lung and breast . Red beet roots were used and a set of technological treatments (drying, blanching than drying and freeze-drying) were carried out to choose the most appropriate treatments to reduce the loss of bioactive substances.
